chocolate chip cookies

Some of you may have heard about the monster storm we were supposed to get here in the northeast and while yes, some places did get a decent amount of snow, where I am the two feet was more like six inches. However, despite the lack of snow, I used it as an excuse to not leave the house and to catch up on some baking. I wanted to share with you my favorite chocolate chip cookie recipe...now everyone has their own recipe that they swear by, if you don't have one yet or are open to trying new ones this recipe comes highly recommended. The recipe is from King Arthur Flour and the cookies are soft on the inside with just the right amount of crunch on the outside with enough substance to satisfy.

So take a look at the recipe below and feel free to leave a comment and let me know what your thoughts are- if you have a recipe you love feel free to share a link as well!

Chocolate Chip Cookies

Ingredients

3/4 cup unsalted butter, at room temperature

2/3 cup brown sugar (the recipe calls for dark, I use light)

2/3 cup granulated sugar (also know as regular sugar)

2 tablespoons light corn syrup

1 tablespoon cider or white vinegar

2 large eggs

1 tablespoon vanilla extract

1/2 teaspoon salt

1/2 teaspoon baking powder

1/4 teaspoon baking soda

2 1/4 cups all-purpose flour

3 cups semisweet chocolate chips (that's more than a standard bag of chocolate chips, I've done it with the suggested amount and with just one bag of chocolate chips and they turn out great either way)

Instructions

Beat together the butter, sugars, corn syrup, and vinegar.

Then add in the eggs.

Follow with adding the vanilla, salt, baking powder and soda.

Finally stir in the flour and chocolate.

The cookbook now says to 'drop the dough by the tablespoonful'- I don't know about you but when I want a cookie I want a cookie so my 'tablespoonful' is more like two-three tablespoonfuls... sometimes I even use an ice cream scoop. Anyways, however big you like your cookies, place on a lightly greased cookie sheet (I use parchment paper because it's more consistent and I don't have to wash the pan after).

Bake at 375 degrees F for about 10 mins until the edges start to brown, the centers may still look a bit underdone but they will firm up while cooling.

Cool on a wire rack until they will no longer burn your mouth and enjoy!
